Welcome to The Next Loaf β a workshop for bakers who already know the basics and want to start understanding how flour choice, fermentation, and technique can completely change a loaf.

Here's what we're getting into:
πΎ Flour Playground
Compare bread flour, whole wheat, rye, and specialty flours while learning how each affects flavor, texture, fermentation, and dough strength.
π§ Autolyse & Fermentolyse Explained
Learn when autolyse helps, when it doesn't, and how it affects dough development.
π§ Inclusion Workshop
Choose from specialty loaves like:
Sun-dried Tomato Parmesan
Jalapeño Cheddar
Rosemary
Learn how to add inclusions without compromising your dough.
π₯Ά Cold Fermentation & Scheduling
Make sourdough fit your lifeβnot the other way around.
π¨ Scoring Showdown
We'll split into Team Wheat vs Team Rye and compete to create the best scoring design.
Bragging rights included.
π₯ Bake a Loaf Together
Each participant will bake a loaf during class so you can experience the full processβfrom scoring to oven spring to warm bread fresh from the oven.
And yes, we'll probably eat hot bread before it cools because self-control is overrated.
